Roasted asparagus covered in chopped peppers and toasted nuts is easy, delicious, and absolutely gorgeous to serve hot or cold you will love this dish.

Cook time: 10 minutes

Prep time: 10 minutes

Servings: 4-6

INGREDIENTS

  • 1 pound asparagus, trimmed and cleaned
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1/2 cup finely diced peppers
  • 1/4 cup chopped hazelnuts

PREPARATION

Toss asparagus with olive oil and salt and pepper and place on a cookie sheet.  Turn oven to broil and put the asparagus in watching closely for about 3 -6 minutes.  Once asparagus begins to brown top with peppers and nuts and sprinkle with salt and pepper.  Continue to broil about 5 minutes until everything is browned.
