This cauliflower pastrami kugel shows that a little meat goes a long way. You can use a food processor to grate the cauliflower, but I like the texture of the box grater. Even vegetable haters will enjoy this version of kugel, the pastrami gives so much flavor.

Servings: 10-12

INGREDIENTS

  • 1 head cauliflower
  • 1 onion
  • 6 eggs
  • 1/2 cup vegetable stock
  • 1/2 cup potato starch or flour
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 cup small diced pastrami pieces

PREPARATION

Preheat oven to 375.

In a food processor or with a box grater, coarsely grind the cauliflower and onion.  Transfer to a bowl and add all remaining ingredients.  Mix well with hands.

Spray a 9×13 souffle pan with cooking spray.  Transfer cauliflower mixture to the pan and bake for about 40-50 minutes until top begins to turn golden brown.

This kugel freezes well and reheats well.
