Mushroom Fried Rice
I love to make this with leftover brown rice that has been sitting in the fridge.

Ingredients
2 tablespoons vegetable oil
1 onion, chopped finely
1 Clove garlic, minced
1 package mushrooms of choice, sliced
1/2 package tofu, cut into small cubes
1 cup leftover cooked brown rice
1 tablspoon soy sauce
1 Egg, beaten
1/2 cup snow peas halved
2 scallions, chopped
Directions
1 Heat oil in a large pan or wok over medium high heat.
2 Add onion, saute until it begins to brown then add garlic and mushrooms. Saute for a few minutes. Add soy sauce.
3 Add tofu and cook until browned, move all over to one side of the pan. Add more oil if necessary and then add rice, cook for a few minutes, then add egg and cook while mixing the rest of the ingredients in. Add snow peas and cook for 1 minute more. Garnish with scallions.
4 Sometimes I like to add a drop of garlic-chile paste for added flavor.
